Pepper plants (Capsicum ammum L.) area commercially grown as ornamental (plants or fruits) or to produce fruits. Pepper fruits are consumed fresh or processed as dried product (crushed, paste, spice, powder. flake, seasonings, oleoresin, etc.). Capsicum family has a long history of cultivation and utilization as a food product. In general, the consumer's choice depends on various quality characteristics. As an ancestral spice. red chilli peppers are pungent and edible fruit obtained from many varieties within the Capsicum genus (over 90 and also 2000 species). Red chilli pepper demonstrates good quality degree due to the existence of phytochemicals, colour, taste, flavor, smell, and bitterness. In this study, the liquid chromatography (LC) procedure was employed for the investigation of pungency and Scoville Heat Unit (SHU) in a total 21 different genotypes of Capsicum species.Öğe INVESTIGATION OF OCHRATOXIN A (OTA) IN TURKISH FREEK WHEATS WITH RESPECT TO SOME QUALITY PARAMETERS USING HPLC(Parlar Scientific Publications (P S P), 2021) Duman, Ahmet Dogan; Kadioglu, CemilOchratoxin A (OTA) is a naturally-occurring mycotoxin in agricultural products posing a significant health risks worldwide. This work was conducted to investigate OTA in Turkish freek wheats with some quality parameters as determined by an HPLC system. To our knowledge, this is the first study on Turkish freek wheats. A total of 50 samples of freek wheat (green, milk stage) produced in Hatay province of Turkey were studied in terms of OTA content and some quality features. The study included sampling, sample preparation, toxin extraction and toxin analysis by HPLC-FLD. Recovery (87.8-96.0%) and reproducibility (RSD<12) of the technique fulfilled the standards of the European Commission (EC) regulation No.401/2006 for the specification of the mycotoxins in food commodities. Analytical sensitivity was determined as 0.005 ng/ml-1. It was determined that OTA was not in detectable limits for all analyzed samples and none of the samples exceeded the EC regulation values.
