Öğe Determination of Egg Quality Characteristics of Different Poultry Species with Digital Image Analysis(Kafkas Univ, Veteriner Fakultesi Dergisi, 2012) Alasahan, Sema; Gunlu, AytekinThe present study was aimed at the investigation of egg quality characteristics of different poultry species by digital image analysis. The material of the study was comprised of eggs of the Japanese quail (Coturnix coturnix japonica), rock partridge (Alectoris graeca), ring-necked pheasant (Phasianus colchicus) and cross-chickens (Denizli x Leghorn F1). Values pertaining to egg quality characteristics were obtained using the conventional method and digital image analysis. Egg length, egg width and shape index values measured by digital image analysis were shown to correspond closely with values measured using the conventional method, within an accuracy range of 98.44-98.54%. As regards internal egg quality characteristics, high error rates were determined for albumen height (32.24%) and yolk diameter (13.44%) values measured by digital image analysis, in comparison to values obtained with the conventional method. In result, it was demonstrated that egg quality characteristics could be determined by digital image analysis, in close correspondence with the conventional method, provided that devices equipped with measurement scales and images with reference points are used.Öğe Fish consumption preferences and factors influencing it(Soc Brasileira Ciencia Tecnologia Alimentos, 2015) Can, Mehmet Ferit; Gunlu, Aytekin; Can, Hayriye YesimFish consumption preferences are affected by individuals' socioeconomic characteristics. The aims of the present paper were (i) to obtain information on fish consumption level and frequency; (ii) to investigate the associations between the socioeconomic characteristics of consumers and their preferences; and (iii) to examine the influence of determinants on fish consumption. Data were gathered through a questionnaire completed by a total of 127 randomly selected individuals from different socioeconomic backgrounds from the Antakya, Turkey. The average consumption was found to be 2.98 kg/person/year for fish. Anchovies, gilt-head sea bream, and sea bass were reported as the most consumed three species, respectively. Significant differences in fish consumption were found among age groups, gender groups, and education groups, as well as between marital statuses. A majority of the consumers eat fish once a month throughout the year or only during the winter months. Fish consumption level and frequency were significantly positively correlated with education (p<0.01), income (p<0.05) and total meat consumption (p<0.01). The stepwise multiple regression model explained 41.7% (p<0.01) of the total variance for fish consumption. The amount and frequency of the consumption in the region, which is very far below the world and Turkey average especially for lower socioeconomic groups and for less-consumed fish species, can be increased by certain policies, such as training, advertising and different marketing strategies. Moreover, consumption should be distributed equally throughout the year instead of consuming only in certain seasons.Öğe Mediator margins in the dairy supply chain and factors influencing marketing preferences in Eastern Mediterranean region of Turkey(Tubitak Scientific & Technological Research Council Turkey, 2021) Can, Mehmet Ferit; Gunlu, Aytekin; Aral, Yilmaz; Sahin, Tugba Sarihan; Arikan, Mehmet SaltukThe purpose of this study is to identify the shares of the intermediaries in the Eastern Mediterranean region milk supply chain (I) and to estimate the factors influencing the raw milk marketing preferences of milk producers (II). The research was conducted in 2017 with 102 dairy farms and 36 dairy industry enterprises in Hatay, Kahramanmaras, and Osmaniye provinces. As a result of the research, it was found that 85% of the milk produced by dairy farms was offered to the market, 65% of the milk entering the supply chain was transferred to the dairy industry and the average capacity utilization rate of the industry was 37%. It was found that the most rational chain for the milk producers and dairies among the 4 main marketing channels in the region is the third channel, which has two stages. Binary logistic regression was found to be significant (p < 0.01) as a whole. It was found that scale and price variables explained the variation in marketing preference by 70%. The cattle unit in the livestock enterprise has a positive effect on the transfer of milk to the industry, and the possibility of selling the milk directly at a higher price has a negative effect. For a more sustainable market organization and supply chain, business scales need to be increased and raw milk prices should be linked with production costs.
