Özet
Recently, cold pressed oils have been preferred to refined oils due to their natural, characteristic flavor and their minor bioactive compounds including natural antioxidants. These minor bioactive lipids that are naturally found in cold pressed oils are phytosterols, phospholipids, tocopherols, phenolic compounds, hydrocarbons (squalene), pigments (carotenoids and chlorophyll), and flavor and aroma compounds. The minor bioactive lipids in cold pressed oils have beneficial effects on human health such as antiinflammatory, antimicrobial, anticancer, antihypertension, and lowering of low-density lipoprotein. Furthermore, these bioactive compounds play an important role in prolonging the shelf life of the cold pressed oils by the increase of oxidative stability of the oil. This chapter highlights the minor bioactive compounds found in cold pressed oils and their functional traits. © 2020 Elsevier Inc.
