This study aimed to examine the antioxidant and antimicrobial activities of butcher's broom (Ruscus aculeatus), Arsuz sage (Phlomis amanica) and globe thistle (Echinops viscosus) plants grown in Hatay. Antioxidant activity was evaluated using the Folin-Ciocaltaeu method, DPPH free radical scavenging method, and β-carotene-linoleic acid emulsion method. The findings were compared to the synthetic antioxidants BHA and BHT. The antimicrobial effect was evaluated by disk diffusion method using Staphylococcus aureus (gram positive bacteria), Escherichia coli, Klebsiella pneumoniae (gram negative bacteria) and Candida albicans fungi. The phenolic substance contents are ordered from high to low as Arsuz sage, globe thistle and butcher's broom. According to the results of both the DPPH free radical scavenging method and the β-carotene-linoleic acid emulsion method, Arsuz sage showed the highest antioxidant activity among the plants examined. According to antimicrobial analysis, it was determined that all plants were least effective against Escherichia coli and most effective against Staphylococcus aureus.
