dc.description.abstractSon yıllarda, tüm ülkelerde, genç insanlarda dahi, kanser, obezite, üreme bozuklukları, şeker ve sinirsel hastalıkların artış göstermesi araştırmacıları bu hastalıkların kaynaklarını araştırmaya itmiştir. Birçok yabancı ülkede, ambalajlardan gıdalara göç eden, sağlık açısından son derece zararlı, endokrin bozucu bisfenol A miktarlarını ve bu kimyasala maruz kalan hayvan ve insanların kan ve idrarlarındaki bisfenol A miktarlarını belirlemek amacıyla giderek artan araştırmalar yapılırken, ülkemizde yapılmış tatmin edici bir çalışma bulunmamaktadır. Her şeyden önce, ülkemizde özellikle son yıllarda oldukça fazla tüketilen konserve gıdalardaki bisfenol A miktarlarının belirlenmesi gerekmektedir.Bu çalışmada, öncelikle iç yüzeyi plastik film ile kaplı kutularda satışa sunulan süt, meyve suyu, krema, puding, ton balığı örneklerine ve hem metal hem de cam kaplarda bulunan konserve bezelye, garnitür, mısır, domates salçası, biber salçası, turşu, mantar, fasulye örneklerine geçen bisfenol A miktarları ve bu miktarların depolama şartlarına (ışık maruziyeti, sıcaklık, süre) ve glikoz, NaCl ve yağ içeriklerine bağlı olarak ne şekilde değiştikleri belirlenmiştir.Işığa ve sıcaklığa maruz kalmış, son kullanma tarihi yaklaşmış ürünlerde, gıdalara daha çok bisfenol A'nın geçtiği, ürünlerin içerdiği glikoz, NaCl ve yağ miktarlarının artması ile gıdalara geçen bisfenol A miktarlarının da arttığı, metal kaplarda bulunan gıdalara cam kaplarda bulunanlardan çok daha fazla bisfenol A'nın geçtiği belirlenmiştir.2012, 54 sayfaen_US
dc.description.abstractIn recent years, the increase in some diseases such as cancer, obesity, reproductive disorders, diabetes, and neurological diseases among even young people all over the world pushed researchers to research the sources of these diseases. In some countries while the number of researches on the amount of endocrine disruptor bisphenol A, and its amount in the blood and urine, which migrates from packages to food and highly hazardous, is increasing, there is not enough researches in our country. First the amount of bisfenol A in canned food, which is consumed too much in recent years, must be determined.In this research, some food, packed in packages with an inner surface covered with plastic film, such as milk, fruit juice, cream, pudding and tuna samples have been used. Some canned food in glass and metal cans such as green peas, garniture, corn, tomato paste, pepper paste, pickles, mashroom and bean samples have been also used. The change in the amount of bisfenol A in all of these food, based on storage conditions, (exposed to light, temperature and time), the amount of glucose, salt and oil in it has been determined in this research.It has been determined that food exposed to light and expires soon has much more bisfenol A. We see that in these kind of food as the amount of glucose, NaCl and oil increase the amount of bisfenol A in it increases.
