Özet
Bu çalışmada, Kars yöresinde tüketime sunulan 200 et ve et ürünü ile 260 adet süt ve süt ürünü olmak üzere 460 örnekte ve 80 sığır karkasında Escherichia coli O157:H7'nin varlığının saptanması amaçlandı. Örneklerden Escherichia coli O157:H7 izole edilemezken 100 çiğ süt örneğinin 2'sinde 100 çiğ kıyma örneğinin ve 100 beyaz peynir örneğinin 1'inde olmak üzere toplam 4 örnekte Escherichia coli O157:H- serotipi izole edildi. Sığır karkaslarından alınan svab örneklerinde ise etken izole edilemedi. Sonuç olarak, Escherichia coli O157'nin çeşitli hayvansal kaynaklı gıda maddelerindeki varlığı, etkenin insanlara bulaşmasında bu gıda maddelerinin halk sağlığı açısından önemli olduğunu göstermektedir.
In this study, the presence of Escherichia coli O157:H7 in a total of 460 animal originated foods consisting of 200 ground beef and meat products, 260 raw milk and milk products sold in Kars region were investigated. In addition to 460 animal originated food samples, 80 cattle carcass samples taken from Kars Municipality Slaughterhouse were in-vestigated to detect contamination of carcasses with Escherichia coli O157:H7. Although Escherichia coli O157:H7 was not isolated from food samples, Escherichia coli O157:H- serotype were isolated from 2 of 100 raw milk, 1 of ground beef, 1 of white cheese. But, Escherichia coli O157 was not isolated from cattle carcass samples. As a result, the presence of Escherichia coli O157:H7 in different kind of animal originated foods has shown that This agent could be important for public health as a vehicle of transmission to man.
