dc.description.abstractBu çalışmada Hatay'ın çeşitli yöresel ürünlerinden (salamura yeşil zeytin, karışık turşu, çökelek, ceviz reçeli, kabak reçeli, biber salçası, domates salçası, tuzlu yoğurt, karadut şurubu, pekmez ve sürk) maya suşları izole edilerek tanımlanmıştır. Ayrıca maya suşlarının probiyotik özellikleri araştırılmıştır. Araştırmada 72 maya suşu izole edilmiştir. İzole edilen maya suşlarının mikroskobik, morfolojik ve biyokimyasal tanı testleri incelenerek tanımlamalar yapılmıştır. Tanımlama testlerinin sonucunda, izole edilen maya suşlarının Pichia sp. %26.3, Zygosaccharomyces sp. %12.5, Candida sp. %12.5, Cryptococcus sp. %7, Debaryomyces sp. %,7 Kluyveromyces sp. %7 ve Citromyces %5.5, Saccharomyces sp. %4.16, Octosporomyces sp. %4.16, Dipodascus sp. %1.38, Hanseniaspora sp. %1.38, Rhodutorula sp. %1.38, Torulaspora sp. %1.38, Williopsis sp. %1.38, Filobasidiella sp. %1.38 ve Zygoascus sp. %1.38 cinslerine ait oldukları belirlenmiştir. Tanımlanan mayaların probiyotik özelliklerinin belirlenmesi için uygulanan antimikrobiyal aktivite, mide asitliğine direnç, safra tuzu konsantrasyonu ve insan vücut sıcaklığı (37°C) değerlerinde gelişimlerinin araştırılması sonucu; Pichia anomala, Debaryomyces hansenii, Kluyveromyces thermotolerans, Saccharomyces cerevisiae, Kluyveromyces lactis, Candida membranaefaciens'in probiyotik olarak değerlendirilebilecekleri saptanmıştır. dc.description.abstractIn this study, the yeast from various traditional products in Hatay (pickled olives, pickles, walnuts jam, pumpkin jam, pepper paste, tomato paste, salted yoğurt, blackberry syrup, molasses and sürk) were isolated and identified, after that probiotic properties of the isolated yeasts were studied. 72 yeast strains isolated in this study. Microscopic isolated yeast strain identification is made by examining morphological and biochemical diagnostic tests. As a result of the identification test, the isolated yeast strains were belong to the genus Pichia sp. 26.3%, Zygosaccharomyces sp. 12.5%, Candida sp. 12.5%, Cryptococcus sp. 7%, Debaryomyces sp. 7%, Kluyveromyces sp. 7% ve Citromyces 5.5%, Saccharomyces sp. 4.16%, Octosporomyces sp. 4.16%, Dipodascus sp. 1.38%, Hanseniaspora sp. 1.38%, Rhodutorula sp. 1.38 %, Torulaspora sp. 1.38%, Williopsis sp. 1.38%, Filobasidiella sp. 1.38% and Zygoascus sp. 1.38%. To determine the probiotic properties of the identified yeasts, the resistance into gastric acidity and bile salt concentration and human body temperature (37°C) and the antimicrobial activity have been tested. According to the results, Pichia anomala, Debaryomyces hansenii, Kluyveromyces thermotolerans, Saccharomyces cerevisiae, Kluyveromyces lactis and Candida membranaefaciens have a probiotic properties.en_US
